Feel Good Fall Cookie Dough Bites

Indulge in delicious pumpkin protein cookie dough that nourishes your body and soul. Nutritious, delicious, and perfect for the season, this no-bake recipe comes together in only 5 minutes!

Pumpkin Cookie Dough Bites

INGREDIENTS:

• 1/3 cup melted coconut oil

• 1 flax egg (1 tbsp ground flax + 3 tbsp water whisked together)

• 1/2 cup pumpkin purée

• 1/3 cup maple syrup

• 1 tsp vanilla

• 1 cup almond flour

• 1/4 to 1/3 cup coconut sugar (to taste)

• 1 tsp pumpkin pie spice

•.1/4 tsp salt

• 1 cup vegan chocolate chips

Preparation

  • In a medium-sized bowl, combine all wet ingredients. 
  • Stir in dry ingredients, then fold in chocolate chips. 
  • Serve immediately or store in an airtight container in the fridge for up to one week.

The perfect midday snack, this edible cookie dough is delish!
