Grilled Portobello Mushroom Burger:

INGREDIENTS:

  • 4 large portobello mushroom caps
  • Balsamic vinegar
  • Soy sauce or tamari (gluten-free option)
  • Olive oil
  • Garlic cloves, minced
  • Burger bun of choice
  • Toppings of your choice (lettuce, tomato, onion, avocado, mayo etc.)

Preparation

  • In a shallow dish, whisk together balsamic vinegar, soy sauce, olive oil, and minced garlic.
  • Place the mushroom caps in the marinade, turning to coat both sides. Let stand at room temperature for 20 to 30 minutes, turning a few times.
  • Heat the grill or indoor grill pan over medium heat. When hot, brush the grate with oil or lightly spray the grill pan.
  • Place the mushrooms on the grill, reserving marinade for basting. Grill for 5 to 7 minutes on each side, or until tender, brushing with marinade frequently.
  • To finish, grab your bun of choice, layer on your toppings and put the mushroom in the middle.
  • Enjoy!
