Herby Coconut Cod Rice Bowl

Weeknight dinners don’t have to be boring, and this Herby Coconut Cod Rice Bowl is proof. It’s cozy yet fresh, comforting yet bright, and layered with flavor in every bite. Developed in collaboration with Madison Vitale, this recipe brings together simple ingredients in a way that feels special.

Flaky cod gently steams in a fragrant coconut broth infused with garlic, ginger, scallions, and a touch of jalapeño, then gets finished with fresh herbs and lime. Served over tender coconut rice that soaks up every drop of the aromatic sauce, it’s the kind of meal that turns an ordinary night into something worth slowing down for.

Herby Coconut Cod Rice Bowl

INGREDIENTS:

  • 2, 5-7oz cod filets
  • 1 cups white rice, jasmine or short grain
  • 1 can full fat coconut milk
  • 1 1/4 cup water or bone broth
  • 1 tbsp sugar
  • ½ tsp salt 
  • ½ shallot, diced
  • 4 cloves garlic, minced
  • 1 tbsp jalapeno, diced
  • 1 tbsp ginger, minced or grated
  • 2 scallions, sliced with the whites and greens separated
  • ½ tbsp olive oil 
  • 2 tbsp dill, chopped
  • 3 tbsp parsley, chopped
  • 2 tbsp cilantro, chopped
  • 1 tbsp basil, chopped (optional)
  • 1 tbsp parsley, chopped (optional)
  • 1 lime - half sliced into wedges and half for the juice
  • 2 cups fresh spinach 
  • Salt & pepper to taste
Preparation
  • Start by washing your rice in cold water until the water is no longer cloudy then placing in a rice cooker or pot with water and/or bone broth, 2 tbsp of the thick cream on top of the coconut milk, salt, sugar and cook according to package instructions - we always make this first and let it continue to steam and cook while we make our meal 
  • In a saucepan on medium heat saute shallot, garlic, ginger, jalapeno, and whites of scallions in olive oil until fragrant 
  • Place two slices of lime in the pan and place fish on top, season with salt and pepper
  • Add coconut milk and cover to steam on low-medium heat until cooked through - spoon the hot mixture over the top of the fish a few times..it will take about 10-12 minutes 
  • Add a squeeze of lime and your spinach then cover and let steam for 2 minutes
  • Mix in the herbs and serve over your bone broth coconut rice
