French Onion Chicken Salad

French Onion Chicken Salad

INGREDIENTS:

  • 1 large onion or 1½ small onions, sliced
  • ½ tbsp honey
  • 2 chicken breasts, finely shredded
  • 2 sprigs fresh thyme
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 1 tsp olive oil
  • 1 tbsp butter
  • ⅓ cup Greek yogurt
  • 1 tbsp mayo
  • 1 tbsp Dijon mustard
  • ½ tbsp grainy mustard
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper
  • Sourdough or veggies, for serving

Serves 4

Prep Time: 15min

Idle Time: 2hrs 30min

Total Time: 2hrs 45min

Preparation
  1. Start by melting your butter on low and adding your sliced onions and honey (the honey will speed up the caramelization process). You will cook these on low for 2–3 hours—I know it's a long time, but it makes a difference... just let them slowly brown and stir every 20 minutes or so.
  2. Season chicken breast with garlic powder, onion powder, salt, pepper, and 1 sprig of thyme each, and roast at 325 degrees for 30 minutes or until cooked through. Set aside to cool.
  3. Once chicken is cooled, either shred it in a stand mixer or with two forks.
  4. Add the cooled chicken and caramelized onions, Greek yogurt, mayo, both mustards, chopped parsley, and season with salt and pepper.
  5. We like to serve ours on top of toasted sourdough bread with extra chopped parsley and cracked pepper.
