Sweet Potato Cranberry Goat Cheese Bites

These easy and flavorful Sweet Potato Cranberry Goat Cheese Bites are the perfect app for winter entertaining! Sweet Potato Cranberry Goat Cheese Bites

INGREDIENTS:

1 sweet potato, peeled and cut 1/4 in thick

1/4 cup herbed goat cheese (or your favorite soft cheese)

1/4 cup dried cranberries

1/4 cup crushed pecans

dried thyme

sea salt

olive oil for drizzling

Preparation

1. Preheat the oven to 400 degrees fahrenheit and line a baking sheet with parchment or spray well with oil before placing the sweet potatoes in an even layer.

2. Roast for 20 minutes, flipping halfway through.

3. Smear the cheese onto each slice, then top with cranberries, nuts, dried thyme, and a drizzle of olive oil. Serve immediately.
